Grate the garlic and ginger and mix all the ingredients. Place the marinade in a double plastic bag. Make deep incisions in the chicken legs, remove a little felt from the chicken and put all the meat in the marinade. It is recommended to marinate for a day. Remove the fillets and pat them dry.
Cut the fillet approx. 5 minutes on each side on moderate heat. Chicken skewers are grilled for a few minutes on each side and chicken thighs on all sides, and then roasted over indirect heat, approx. 20 minutes. Brush with the remaining marinade towards the end of the cooking time.
Put half a lemon on the grill for a few minutes. Squeeze some lemon juice on the meat.
Serve with grilled sweet potato, aîoli, salt and remaining marinade as a sauce.
Grilled sweet potato
Boil 3 large sweet potatoes with skin on until barely tender. Cut them into slices and brush with a little oil. Grill them a little on both sides and sprinkle with salt Serve with a dollop of aîoli and a sprinkling of chives and maybe a little chilli.
Mix in finely chopped chilies or herbs
Orange and fennel salad
Cut the fennel into thin slices and put them in a bowl of ice cold water (preferably with ice cubes) until it gets nice and crispy. Mix in the rest of the ingredients. Just before serving, pour lime juice and olive oil on top.
