There’s not much summer like a delicious and fresh salad. And the beauty of salads is that they are perfect as a side dish or as a separate dish.

We asked Trine Sandberg, who runs Norway’s biggest food blog – namely Trine’s Matblog – which salad is her sunny summer favourite. His choice was simple.
Salad with strawberries, tomato, balsamic and Apetina
– This is one of summer’s favorite salads with strawberries, cherry tomatoes, cucumbers, carrots and a rich balsamic dressing. It’s all topped with Apetina white cheese, says Trine Sandberg.
He adds that Apetina, with its salty and sour taste and creamy consistency, is a nice contrast to the sweet elements of the salad.
How did you come up with this recipe?
– This is a salad mix that I have experimented with quite a bit in the past and is a huge summer hit. What I thought was to get strawberries from Apetina, which are sweet and good cheese against salt. Then, in addition to basil, combine with sweet and rich balsamic, says the food blogger.
This is a colorful salad that pleases both the eyes and the taste buds. It can be enjoyed as it is with good bread, as part of a summer buffet or as a side dish, for example, with grilled food.
Here’s how you do it.
Cut the ingredients according to the instructions. Use a spiralizer or vegetable peeler and make strips out of the carrot. Toast the pine nuts in a dry pan. Place the vegetables in a large salad bowl and add the strawberries, pine nuts and Apetina. Carefully toss the salad together.

Mix together the sauce ingredients and taste until you find a nice balance between the different flavors.
Just before serving, drizzle some dressing over the salad and serve the rest on the side. Enjoy immediately with good bread, on its own, as part of a buffet or as a side dish, for example with grilled food.
– Apetina makes vegetables more exciting. Feel free to crumble Apetina over fresh, oven-roasted or grilled vegetables, or make a delicious cream cheese (with a bit of garlic and chili) added to grilled vegetables, adds Trine.
