A waffle iron can be used for much more than just making waffles. Waffle cookies are a slightly unusual waffle recipe with orange and chocolate.
The recipe is extremely simple and is prepared as usual in a waffle iron. Maybe it could become a new waffle favorite?
This is a recipe for waffle cookies with orange and chocolate
Makes 10-12 cookies
Ingredients:
- 2 egg whites
- 4 tbsp melted butter
- 1 dl rice flour
- 1 dl coconut sugar or other sweetener
- 1 teaspoon of vanilla sugar or vanilla extract
- 0.5 dl oat drink or other milk
- 1 teaspoon grated orange peel
Chocolate Icing:
- 80 g raw chocolate or dark chocolate
- 2 tbsp grated orange peel

Approach:

Egg separator: A good tool to easily separate the yolk from the rest of the egg, avoiding spillage and damage to the yolk. Click on the image to access the product.
Heat your waffle iron to 6 or 6 1/2. We recommend Wilfa waffle iron with adjustable thermostat.
Separate the egg white from the yolk, with the BAKE egg separator it becomes even easier. Pour the melted butter with the egg whites and beat it until smooth. Then add the dry ingredients and mix. Add the milk last before mixing in the grated orange peel.
Grease the waffle iron with 1 tablespoon of butter, pour in the batter and bake for about 3 minutes. Remove the cookies from the iron and cool on a rack to harden. Fry all the dough in this way.
When the cookies have cooled, you can prepare the chocolate glaze. Be sure to use a heat-proof bowl and melt the chocolate over hot water. Dip the cookie in melted chocolate and sprinkle with grated orange peel. Grating orange peel becomes easier with a good grater.
Store the cookies in an airtight container or in an airtight Norwegian glass in the refrigerator. Note: The more sugar there is in the dough and the longer you bake the cookies, the crispier the result.
