Vanilla ice cream and strawberry sorbet in cookies – NRK Mat – Recipes and inspiration

Vanilla ice cream
Mix milk and cream in a saucepan. Scrape the seeds out of the vanilla pods and mix the seeds into the cream mixture. Let it boil.

Beat egg yolks and sugar in another pot. Add warm vanilla milk while stirring. Heat the mixture to 84°C. Strain and add the soaked gelatine sheet. Cool the mixture.

Run it in the ice cream maker, follow the instructions. In a small home ice cream maker, this is enough for two batches. Leave the ice cream in the freezer for a few hours.

Strawberry sorbet
Boil water and sugar to make syrup. Boil the leaf strawberries with strawberry syrup or Strawberry Monin. Process with a hand blender and add the soaked gelatin sheet. Season with lemon. Calm down.

Place in the freezer while stirring with a balloon whisk. Mix approx. every 30 minutes to prevent ice crystals from forming. The ice machine can also be used for sorbet.

Melt the butter and let it cool. Beat the eggs, add sugar and beat into a fluffy egg mixture. Beat in the butter (don’t let it stick). Mix wheat flour and potato flour. Sift the flour into the egg mixture and mix with a spatula. Mix in the water to make a thick batter. Add more water if the dough seems too thick. Let the dough rest for fifteen minutes before frying.

Put a small scoop of dough into the hot cookie iron. Bake the yellow-brown cakes, immediately mold them into the cream sauce. Make a thin cardboard template on which to mold the biscuit.

Place the ice cream cookies inside each other or in another similar glass so that they keep their shape until they cool. Ice cream cookies can be stored dry for a few weeks.

If there is no cookie cutter, ice cream cookies can be made in the oven. Make small “pancakes” on baking paper. Bake them in the oven at 150 °C for approx. 10 minutes. Don’t cook more than two at once, because they have to be shaped right out of the oven and they freeze quickly.


Good ice cream for the lazy
Run the purchased vanilla ice cream in a blender to release the air, most store bought ice creams contain a lot of air. Add sour cream if you want a more sour ice cream. If you want to enhance the vanilla flavor, you can boil some vanilla and cream and mix it into the ice cream. Spices can be varied endlessly. Put the ice cream in the freezer for a while until it is soft enough.
